Of 102 health inspections conducted in Monroe County last month, 30 had critical violations, 14 had no violations and 87 had uncorrected violations from previous inspections, according to new reports released by the Monroe County Health Department.

What are critical and non-critical violations?
Red “critical” violations include “food source and condition, food cooking and storage temperatures, food handler hygiene practices, water and sewage, contamination of food with pests and use of toxic materials,” according to a spokesperson for the New York State Department of Health.
Critical violations must be corrected during the inspection because they involve factors that can lead to foodborne illnesses.
In New York state, restaurant inspections are not conducted on a pass or fail basis.
Non-critical or blue violations are not directly related to factors that can cause foodborne illness, but can have a negative impact on the operation of the restaurant. Such violations relate to the maintenance, design and cleanliness of the facility.
Non-critical violations are not as urgent as critical ones and must be corrected within the time allowed by the health inspector.
How often are health inspections performed in Monroe County?
The frequency of food business inspections in New York state depends on the risk category of the business and its history of health code compliance.
High-risk food businesses are inspected twice a year, medium-risk food businesses are inspected once a year, and low-risk food businesses are inspected every two years.
Examples of high-risk food establishments include restaurants that serve table service, cafeterias and school kitchens that prepare meals. These are businesses that have complex food processes, such as pre-preparing food or reheating and cooling food.
Medium-risk food businesses do not need such complex processes because they offer low-maintenance foods such as pizza, burgers and sandwiches.
Bars and cafes are typically low-risk food service establishments due to the minimal preparation required to serve food.
