Quay Restaurant will close its doors in 2026, final service slated for February

Sydney’s iconic Quay restaurant will close its doors in the New Year as a rival hospitality group takes over the coveted location.
The Quay will continue to be open at its Circular Quay location from 5.30pm Tuesday to Sunday until February 14, the last day of service.
Starting January 1, a special Wharf Experience menu will be available that pays homage to the institution’s 37-year history.
Famous for its sparkling views of Sydney Harbor and its innovative menu, the restaurant first opened in 1988 under the leadership of restaurateurs Tony Bilson and Leon Fink, originally named Bilson’s.
In 1999 the venue was renamed Quay.
“The Quay has been a part of my life’s work – a place where creativity, hospitality and the beauty of Sydney Harbor come together,” Mr Fink said.
“I am extremely proud of what we have accomplished together with Peter and the outstanding teams who have shaped the restaurant’s legacy.”
Namesake hospitality group Fink has announced it will take over Australian Venue Co’s iconic restaurant space within the Overseas Passenger Terminal.
The rival accommodation group owns a number of high-profile accommodation venues including Bungalow8, Untied and Kingsleys, as well as The Squire’s Landing at Circular Quay.

“Quay has allowed me to express my culinary identity in ways I never imagined,” said executive chef Peter Gilmore. “It has been the honor of my career to lead this kitchen and collaborate with the extraordinary artisans and producers who inspire our work,” said executive chef Peter Gilmore.
“I am deeply proud of the team, past and present, and what we have created together.”
Mr Gilmore has run the restaurant since 2001 and many of its dishes, including the Snow Egg, have had a monumental impact on Australia’s culinary landscape.
Under his leadership, the restaurant won the Three Hats award in the Good Food Guide for 23 consecutive years and is consistently ranked as one of the best restaurants in the world.
