I’m sorry if you disagree (sorry), but winter is the best season and I won’t hear another word against it. There are a number of reasons for this – which I’ll happily share with you over a nice bottle of Shiraz in front of a roaring open fire at my local pub – but top of the list is the return of the glorious single pot. The heavy enamel pot sits under the sink collecting dust for months, but come May it emerges, taking pride of place on top of the stove by September, ready for the next slow-cooked, crumbling feast. There are few pleasures more satisfying than the sound of a pot bubbling quietly in the background, filling the room with warm, comforting aromas that begin with caramelized onions and garlic and escalate as the meat is tenderly seared. A sip of wine here, a thrill and a season there, but for the most part it takes care of itself, requiring little attention, creating minimal mess and maximum joy along the way.
