Curated by the manager chef Suresh Rajan Pilllai, this traditional feast exhibits Kerala’s rich kitchen heritage with carefully prepared meals that capture the essence of the consent celebrations. Among the outstanding offers include Sharkara Varatti – Jaggery syrup and delicate sweet banana chipsi coated with aromatic dry ginger and cardamom – and ginger, green peppers, iron and jaggery. The menu also has a thick roasted coconut and spice sauce, Yam and black chickpea preparation in the menu, Kooti Curry, next to the one – a thin -baked pumpkin cooked in coconut milk and a cowpea bowl.

The banquet ends with the traditional island Pradhaman, where the rod is cooked slowly in the thick coconut milk of the Rodgery, Kakule and Ghee roasted cashew peanuts, and the aromatic roasted coconut sauce that exemplifies Kerala’s refined spice techniques.
