According to People , the recipe for mini enchilada bites is to preheat the oven to 350°F. Place the tortillas on the cutting board. Using a 3-inch circular cookie cutter, cut out 24 tortilla rounds.

Aniston then asks to brush one side of each tortilla roll with oil. Push tortilla rounds, greased side down, into muffin tins to create small cups.

Then mix Cheddar and Monterey Jack cheese in a small bowl.

Then spoon about 1 1/2 teaspoons enchilada sauce, 1 1/2 teaspoons chopped onion, and 2 teaspoons cheese mixture into each tortilla cup.

Enchilada Bites should be baked in the preheated oven for 20 to 25 minutes until the cheese is melted and the tortillas are crisp and golden on the bottom.

You should then remove the Enchilada Bites from the oven and transfer them to a plate. Sprinkle with crumbled Cotija cheese. Serve immediately with guacamole.

6 (8-inch) flour tortillas

1 tablespoon. avocado oil or other neutral cooking oil (such as canola oil or vegetable oil)

2 oz. Cheddar cheese, grated (about 1/2 cup)

2 oz. Monterey Jack cheese, shredded (about 1/2 cup)

¾ cup enchilada sauce

½ medium yellow onion, finely chopped (about 3/4 cup)

2 oz. Cotija cheese, crumbled or grated (about 1/2 cup)

Store-bought guacamole

The appetizers serve 12 people, but if each person has two, that would obviously be six people.

It takes a total of 35 minutes to make these cheesy wonders.
