Visiting the Sapphire Coast and not eating oysters is like a child who gets a new toy for Christmas and keeps it in a box. More than a few bivalve fanatics will tell you that Merimbula rock clams are particularly excellent due to their bold mineral zing and fruity appearance.

These, along with shrimp rolls and local crayfish among the mangroves at The Oyster Barn, are something you can experience right away when you rent. Or if you want to buy a dozen oysters and take them to the beach with a bottle of BYO Bollinger, that can be made easier too.
