Under Bakery, Mawson – SMH Good Food app review

It seems like a lifetime ago when Lachlan Cut, fresh off his assignment in Copenhagen, started cooking bulls to sell at his local farmers’ market. In reality, that was only 2019, but in the nearly six years since then we’ve seen Under Bakery grow from small fry up to the most famous independent bakery in the ACT.

Whether at headquarters in Mawson or the new facility in Fyshwick’s Dairy Road area, yeast-risen, twisted cardamom buns and sourdough remain signatures, but dark crust croissants, sesame tin loaves, pear-stuffed Danishes and seasonal specials made with organic Woodstock Flour and brewed with bulk beer from the Barrio are equally appealing.
