The honey-roasted carrots of our childhood have officially received some much-needed shine. These are ridiculously extreme things, but the real fun is in the preparation. I recommend using steel skewers; not just because they’re oven-safe, but because there’s something alarmingly therapeutic about stabbing carrots like a voodoo doll of your worst enemy.

When serving, be sure to scrape every drop of roasting juice and gnarly, chewy, caramelized parmesan bits from the pan. They just enhance the flavor.

If you don’t have the energy to make salsa verde, a good store-bought salsa verde will serve you well.
