Apple, lemon and ricotta cake

This cake was inspired by a cake my mom made when I was little. I have fond memories of the like sitting on the bench and cooling off, while my brother, sister and I just hung in the air. Not too sweet and studded with apple and almond sprinkles, it’s the perfect accompaniment to afternoon coffee. Ricotta and olive oil also keep it moist, which means it can sit on the bench, covered, and sliced as the days go by.
