‘Honey helps wounds, burns to heal faster’: Study finds that it has anti-bacterial and anti-inflammatory properties

Starves bacteria before they even start
Think of honey as a castle made of sugar. Roughly 80 percent of its weight consists of pure sugar, leaving almost no free water for bacteria to feed on. Insects need water to reproduce, and honey’s sugar-heavy nature literally draws moisture from any microbial cells unlucky enough to get inside it. This is the same trick your mother used when she made jam or pickles, added sugar or salt, and nothing survived long enough to spoil it.

Then there’s the acid angle. Honey typically has a pH between 3.2 and 4.5; Even though it doesn’t taste that way, from a chemistry standpoint it’s literally sour. Most bacteria that cause wound infections prefer to live in a near-neutral environment. If you leave them in something that acidic they can’t thrive.
Bees Are Essentially Producing Their Own Antiseptic
This is where it gets really clever. Bees add an enzyme called glucose oxidase to honey. As long as the honey remains thick and intact, this enzyme sits there quietly. But the moment the honey comes into contact with water, such as wound fluid or moisture from a cut, the enzyme wakes up and begins releasing small, steady amounts of hydrogen peroxide (the same thing in your medicine cabinet’s antiseptic bottle). Not a very harsh dose all at once, but a slow, controlled drip. Researchers who have studied it, including a widely cited 2016 review on the subject, describe it as a layered defense, sugar, acid, and homemade peroxide, all working together, rather than any single trick doing the job.
And there are bonus weapons for several types of honey. Honey, made by bees that feed on a shrub found mostly in New Zealand and Australia, contains a compound called methylglyoxal, or MGO for short. Unlike the peroxide trick, this one doesn’t fade, it continues to work even after the peroxide wears off. The catch is that MGO levels vary wildly from batch to batch, so no one can take honey from a kitchen jar and call it medical grade.
Why Is Hospital Honey Not the Same as the Honey on Your Shelf?
There’s an important distinction that people often overlook: the honey used to treat a wound in the clinic and the honey sprinkled on your morning toast are not the same product, even though they both come from a beehive. Regular table honey is not sterile and can carry bacterial spores that are harmless to eat but risky on an open wound. Medicinal quality honey goes through a completely different process. It is usually treated with gamma irradiation, which destroys the spores without weakening the antibacterial effect of honey and is then packaged in specially designed gels and dressings. In fact, this is no longer a herpes alternative treatment. In the United States, honey-based wound products are officially approved as medical devices; MEDIHONEY, a manuka-based dressing, received approval from American drug regulators in 2007. Today, doctors use these products under appropriate clinical supervision for selected burns, persistent ulcers, and wounds that refuse to heal in the usual way.
But It’s Not a Miracle Cure, Let’s Be Honest About That
This is where some caution needs to be exercised. A widely cited 2015 review of existing research found that honey accelerated healing in certain burns compared to some standard dressings, but supporting evidence for most other types of wounds was weak at best. A more recent analysis from 2024, which combined data from eight chronic wound studies, found that honey dressings once again stood out in terms of speed of healing and wound closure, but the researchers themselves flagged the quality of evidence as very low and found no real advantage when it came to full healing or how quickly infections cleared.
Promising, not proven beyond doubt. And it’s certainly no reason to raid the kitchen jar for a nasty cut or superficial burn. Anything serious still needs a doctor or a trained wound care specialist, not a spoonful of shelf honey and hope.
But what is truly remarkable is the course of the story. An idea so old that it was written down by ancient Egyptian doctors, quietly fell out of fashion for centuries, and has now returned to modern medicine in a lab coat, sterilized, edited, and studied in clinical trials. Honey has never changed. It’s everything we build around it.
