Should pizza-making robots get a second chance?

A Parisian restaurant once promised a different pizza experience than others. Order your pizza and produce a robot pie within five minutes from scratch, no human hand. This was the vision of Pazzi Robotics, a French initiative that combines advanced automation with the Italian kitchen tradition.

For a while, the company seemed ready to redefine how people saw the pizza. However, after nine years of innovation and effort, Pazzi closed its doors in 2022. This result raises an urgent question: Has Pazzi failed to be in front of the time and pizza production robots should be given another chance?

Pazzi Robotics was not just another food technology company. The team received five patents and worked with world champion Pizza chef Thierry Graffagnino to perfect their recipes. They received more than 3,000 requests from around the world. Robots can knead the dough, add the sauce, add topings, cook, slice, and be a pizza box without any human assistance. Technology has impressed a lot and has even won the title of CEO Philippe Goldman “the most innovative CEO of the Fast-Food industry”. Despite these successes, Pazzi could not find a buyer and had to close.

Goldman, after the closure of the company shared his thoughts about LinkedIn. He stated that Pazzi has reached most of his goals and established strong partnerships and expressed his sadness and disappointment. It was also reflected in the difficulties. According to Goldman, hardware initiatives require significant time and money to be successful. He found that the robot ecosystem in France was not mature enough to support such an attempt. In addition, a technology company and a restaurant realized that the business creates unique difficulties at the same time. The two industries have different cultures, customer expectations and business models.

Goldman admitted that he did not use the board of directors enough to address difficult problems and was slow to build a strong team of executive teams. Despite his disappointment, he is proud of what Goldman Pazzi has accomplished and believes that he has paved the way for future innovators.

He also noted that public and institutional financing for hardware projects is limited in France. Perhaps an Italian launch could have given more originality and acceptance to Pazzi’s robots. Or perhaps the world wasn’t ready for robot -made pizza, regardless of where it was.

Pazzi’s latest system was based on a mixture of robotic, artificial intelligence and machine vision. It can work 24/7 by producing pizza in less than five minutes.
