Flat bread with feta cheese and herbs

Contents
- 1⅓ cup (200g) self-rising flour
- ½ teaspoon baking powder
- 200 g Greek yoghurt
- 2 spring onions, chopped
- ½ cup mixed herbs of your choice: dill, parsley, thyme, mint, roughly chopped
- 200 g white cheese, crumbled
Method
- Combine the flour, baking powder, and yogurt, then mix by hand until the dough comes together.
- Dust your work surface with flour, gently knead the dough into a smooth ball. Set aside.
- Combine feta cheese, herbs and scallions. Mix well.
- Divide the dough into 6 equal parts and roll out each part with a rolling pin.
- Place a tablespoon of feta filling in the center, then bring all the corners to the center and seal.
- Turn the package over and gently flatten it. Repeat the same process with the remaining dough.
- Apply some olive oil until all surfaces of the bread are covered.
- Place in a pan over medium heat and cook for 5-6 minutes on each side or until puffed and golden brown.
