One of Melbourne’s best-loved independent wine shops, Blackhearts and Sparrows has nearly a dozen locations across the city. The last one in Fitzroy is a bit different. Called By the Glass, it’s a low-fi bar as it is a bottle-o, allowing you to try before you buy at a reasonable price.

“We don’t put in the usual restaurant profits… so [wine] “It could be less than $5 a glass,” says co-founder Paul Ghaie.

Sit at the communal table, snack on cheese and charcuterie, and sip whatever’s open, maybe a $10 glass of Gum rosé or a fancy chablis.
