Chef Leo Bravo first cooked for Melbourne’s small Ecuadorian community in his CBD flat, sending out fortnightly WhatsApp messages announcing the menu. A counter in the Il Mercato Centrale food hall on Collins Street has since brought these dishes to more people.
Hornado is the hero, featuring corn dish hominy and potato pancake llapingachos, as well as whole braised pork served both shredded and as the crispy shells of chicharron. A roadside food traditionally eaten before a long day of work, Bolon combines green banana puree with pork cracklings and cheese, formed into balls and fried. It comes topped with cheese sauce, a fried egg, and your choice of pulled chicken or beef, tangy aji peppers, and peanut sauce.
For something lighter, ceviche goes two ways: shrimp in a slightly sweet tomato-based marinade or calamari garnished with a tangy herb mixture.
