The bakery’s owner, Michael Younan (formerly of Sourdough Kitchen), says he hears “several times a week” about how grateful locals are to have an outpost of this bakery (Melbourne’s fourth) in the Heidelberg neighbourhood. Minimalist and fresh, it offers soft milk-dough cinnamon rolls slathered in vanilla cream-cheese frosting, cardamom buns layered with cardamom-orange butter, and ready-to-go sandwiches and baguettes.
The pastries undergo a three-day lamination process, using sourdough loaves, heritage and stone-ground flour from the Yarra Ranges, to create a soft crumb and dark crust.
Signature elements: Cinnamon slide ($6.50) and cardamom bun ($6.50).
